Just stopping by to say CONGRATS! I don’t have any secret fruit or veggie recipes, but I do love me some smoothies. Or fruit salsa. Winters are hard if you are not a root veggie kind of gal (I’m not), so I tend to stick to traditional salads and carrots (okay, carrots bathed in honey and butter–condiments don’t count, right?)
That’s so great that you were ale to learn so much about yourself! We’ve been getting a ton of apples and interesting veggies from our CSA (which I LOVE). For salads, I like having Craisins or other dried fruit on hand to add, plus a small amount of nuts (walnuts, pecans, pine nuts, whatever we have. I buy them at Costco and keep them in the freezer to stay fresh). Last night, we had a ton of beets, so I roasted them and made a super easy balsamic reduction. It was my first time doing this and it was delicious! I also love little squashes halved, filled with applesauce, Craisins and cinnamon & roasted in the oven. SO good and healthy!
This is more appropriate for the spring, but I love this quick zucchini saute. I just slice a zucchini into matchstick size slices. Toss them with a very little bit of olive oil, salt and pepper and a handful of slivered or sliced almonds. I just saute it for five minutes on medium heat (because I like them heated but with a little crunch) but you can saute for longer.
I also love making grilled and/or roasted veggies. Slice squash (i love zucchini and summer squash), mushrooms, bell peppers, onions and cherry tomatoes. Toss with a little olive oil, juice from one to two lemons, salt, pepper and thyme. Skewer and grill. Or you can add some sliced potatoes and roasted in oven at 350 until tender. You can microwave the potatoes for a couple of minutes to help the roasting go faster.
For roasting, I mix up the marinades. Sometimes it’s a little olive oil and seasoned salt. Sometimes its with olive oil and fresh herbs like rosemary. Other times its balsamic vinegar and olive oil.
My favorite different way to eat apples is with a bit of peanutbutter on top. My favorite different healthy veggie is steamed green beans with parmesan cheese on top!
Girlie-girl…I love your picture..you’re a beauitful woman..Might I suggest spaghetti squash..so easy to cook..just wash the squash-dry it- poke lots of hole in it with a knife…put it in microwave cook high for about 20/25 minutes…Until the skin in soft to the touch..watch out it’s pretty hot..Let it cool…cut in half-length wise– scoop seeds out–scoop the stringy meat out of shell serve with tomatoe sauce..very yummy and very buttery without even adding butter…hummm I eat it all the time…I think the boys might like it..all 4 of them…I am always buying an extra one cooking it and forcing it on my friends….Best thing about it no clean up…Oh, I bet you could serve it out of the shell (of course after scooping it out and then replacing it) and the boys would dig that…Let them help you cook it..then they’ll part take in the eating of it…I only wish I had found this veggy when my sons where younger..what a fun food to eat…Try it let me know…

Hey Pam, I think you’re looking great! My latest veggie favorite is roasted cauliflower – it comes out nice and nutty and tasty. Just toss with salt and just a little oil and roast at 375 or so until it’s browned and a little crispy. I like to then grate a little bit of parmesan cheese over the top.
Grapes! Or my husband makes smoothies with a mixture of frozen berries and broccoli (which you can’t even taste) non fat yogurt and OJ! My fav way to eat healthy!
Artichokes! Growing up I always had them traditionally: steamed served with a heaping side of butter. Now I’ve found to steam, then marinate in balsamic vinegar and some garlic, and grill them. Yum! And Sooo healthy!

I’m not sure if you’re into Easten flavors but I love getting my dose of veggies in Curries, it’s great if you use chicken breast or pork, the carrots get so tender and delicious. Also I love Spinch sauteed with minced garlic. yum. or i do a yummy low sodium sauteed of cauliflower, carrots, and mushrooms with garlic. 🙂
I like making healthy dips to go with my fruits or veggies. Low-fat cream cheese, marshmallow cream, and confectioners sugar, with a splash of lemon juice all blended together makes a super yummy fruit-dip! I like getting low-fat sour cream and adding a packet of Hidden Valley Ranch Dip to it, makes a yummy veggie dip! Both are low in fat and calories.
I have a great microwave steamer that I use for all my fresh veggies…..I love to steam brocolli, cauliflower, aspargus, beans and peas. The steamer works beautifully and even my kids will eat their veggies without butter or sauce which is much more healthy.
Cube and roast butternut squash in a 400 degree oven for about 30 minutes (drizzle with one tbsp olive oil, salt and pepper before putting in oven). It’s great hot, cold on a spinach salad, or just as a cold side dish.
I LOVE making fresh salsa! It’s so healthy and I have convinced myself that if I spend the time chopping all those veggies I’m burning calories too. This might explain my food problem teehee.
